Olive oil is without a doubt one of the best examples when combining gastronomy and health.

Olive oil represents an essential cornerstone of the Mediterranean diet. It includes exceptional health properties and it is also good for our skin and hair. Among the benefits of olive oil, it should be highlighted the cholesterol control thanks to the oleic acid which forms part of its composition. Moreover, its consumption is particularly recommended as it contains antioxidant elements that are useful in order to prevent ageing.

The Mediterranean diet lies in a balanced and wise combination of foods providing all the needed nutrients for a healthy life. Olive oil plays a leading role in order to reach this final goal.

Within Mediterranean diet, we can assure that olive oil represents a core element when cooking. It can be used in different ways: raw (salads, vegetables dressing, with bread or smoked foods), seasoning as well as for sautés and stews.

Infused olive oils

Ingredients have to macerate during at least one weak in a cool and dimly lit place (never in the fridge) to get a flavoured olive oil. The mixing can be kept for several months.

Herb or pepper infused oil

For ¾ litres of oil: 1 tablespoon of peppercorns, rosemary and a bay leaf. Recommended for rice dishes, salads and meats.

Chilli and bay infused oil

8 chillies and 2 bays of leaf are used for ¾ litres of oil. Recommended for pizzas.

Basil infused oil

25 gr. of fresh basil and a teaspoon of salt are added to ½ litres of olive oil. Recommended for salads.

Oil infused with 4 aromas

For ½ litres of oil: 10 gr. of dried rosemary or a fresh sprig, 10 gr. of dried thyme or a fresh sprig, 10 gr. of oregano or a fresh sprig, 10 gr. of dried basil or a fresh sprig, one and a half teaspoon of salt. Recommended for salads, meats and pastas.

Castillo de Araciel produces only Arbequina cultivar extra virgin olive oil. The cultivation takes place on the lands "La Dehesilla" and "Araciel" which are located in Corrella, Navarre.

The Arbequina cultivar is drip-irrigated thanks to a marsh which is within the area. The small size of the trees of the aforementioned cultivar allows its growing on an intensive basis.
